Tama (Chief) was born and raised in Honolulu, HI where he started performing almost as soon as he could walk. This was a part of the Polynesian culture and being raised as a church goer. At age 16 he became a professional Polynesian dancer. He has even performed with Don Ho and at Germaine's Luau in Honolulu. He was selected as a feature dancer for the famous Mai Kai restaurant in Ft Lauderdale, FL in 1986. He learned to cook, and learned to LOVE to cook, from watching his dad who was a chef at the Outrigger Hotel in Hawaii. He started as a young boy by flipping burgers and steaks for his dad. He and his family began performing at family get togethers and special events. From there, people would ask for them to perform at other events and it turned into a production and catering service. He opened his first restaurant in 2008, called Alisi's after his wife, in Humble TX. Alisi's turned into Hula Mama's with traditional Hawaiian food and a dinner show and moved into a bigger venue. The restaurant was hit hard by the Covid pandemic and had to shut down. Bringing us to present day with a food truck called Chief's Huli Huli BBQ, with plates like Teriyaki Beef and Kalbi Shortribs, and a Hawaiian kitchen at a local gas station called Chief's Huli Huli Kitchen, where we cook traditional Hawaiian style Huli Huli Chicken. And now, it's time to incorporate this popular Hawaiian sweet treat into our lineup. We are please to add delicious Wiki-licious malasadas to our menu!
